When summer comes around and it is time to get out your Weber barbecue, then you may be pleased to have some barbecue recipes to hand. Most people recognise that the black and burned sausages and burgers of yesteryear are no longer adequate fare for a great family barbecue. When you choose a Weber barbecue you have more control over cooking temperatures and this makes it a lot easier to cook food out in the open. Sticky barbecue chicken wings and chicken and pepper kebabs, as outlined below, are among some of the most popular summer barbecue recipes
Sticky Chicken Wings
As with most barbecue recipes you will need to adjust quantities to the number of people you are cooking for and the amount that your Weber barbecue will cook at any one time. You need olive oil and chicken wings, the sticky sauce is made from a combination of ketchup, balsamic vinegar, dark brown sugar, ground garlic, Worcestershire sauce, Tabasco sauce, Dijon mustard, paprika and a little chilli powder.
Mix together all the ingredients except the oil and chicken wings and stir thoroughly, rinse and dry chicken wings and place in large, sealable plastic bag, pour marinade on top of the wings and seal bag, making sure there is no air and place in fridge for five or six hours., When ready you can remove the wings and discard the bag, brush or spray wings with olive oil and sear over a medium heat for 4-6 minutes turning once, then continue grilling until cooked through.
Chicken and Pepper Kebabs
You need chicken cut into bite sized pieces, breast is easiest for this, and a mix of red, green and yellow peppers cut and deseeded, some kebab skewers, lemon and soy sauce. Place chicken and peppers alternately on skewers, dip first in lemon and then in soy sauce. Put the kebabs on the barbecue and cook for fifteen minutes or until meat is cooked through, turn occasionally.
